This is to be expected when pushing the body to find a quick source of fuel, this does come from carbohydrates as they are a slow releasing form of energy depending on the complexity of the food.
Overall, it has been established that doing an exercise for longer period of time like doing the Stairmaster or swimming ensure a consistent amount of calories burnt; this is mostly due to them not increasing the heart rate to dangerous level and ensuring minimal damage to the joint around the body. Ethier in his final statement, made sure to preach about how the balance of diet, exercise and being aware of your metabolism, are a combination that will deliver the planned results.
